Abstract: Abstract:The demand put on Taiwan's market of dining out has dramatically increased 14.2% more than ten year before. It seems consumers became more hea1th conscious. The pu ose of this study was to explore the consumers' demands of health-preservation restaurants when they eat away from home. Base on the results, it also examined the relationship between consumer behavior and the demands of hea1th-preservation restaurants. This survey study analyzed the data by using the descriptive analysis, factor analysis, t-test, ANOVA, and canonical analysis. The managerial implications of the findings for the foodservice industry and researchers are discussed as well.
