Abstract: Abstract:Grouper has become a popular cultured fish species in Taiwan recently. The information of frozen storage condition for grouper is scanty. The aims of this study are to evaluate freshness indicator of groupers at different frozen storage condition and to develop an instant product of microwave food for grouper industry.
