Abstract: 摘要:擬確立大豆胜?螯合鐵產品具實質保健功能,參考衛生署之評估方法進行促進鐵吸收功能性之動物實驗,以及分析大豆胜?螯合鐵各項指標(螯合之比例、耐酸及膽鹽試驗)。
Abstract:This study aims to scale up the production and evaluate the functional properties of iron chelate of soyapeptide. The functional properties include ratios of iron chelated, gastric juice resistance and bile salt tolerance. The animal test for the assessment of iron absorption will be carried according to evaluation method bulletined by the Department of Health.
